In honor of World Vegan Day, I’ve decided to extend my uncook book offer for one more week. ‘Tis the Season for Raw Apple Pie…
Apple Pie
- Pie Crust (See below)
- 3 cups shredded apple (For larger pie, use 4 cups.) – No need to peel (Most food processors have shredder attachments.)
- 1/2 cup pureed dates (Larger pie: 3/4 cup) (Remove pits first!)
- 1 teaspoon cinnamon (Larger pie: 1-1/2 teaspoon) or to taste
- Optional: 1 cup well-ground almonds (Preferably soaked in purified water for several hours or overnight, peeled, and dehydrated first) (Ideally, use plant-sourced digestive enzymes with unsoaked nuts, seeds, and grains.)
- Optional: 1 tablespoon alcohol-free vanilla extract, or to taste
- Optional: 1/4 to 1/2 cup raisins
Please use organic ingredients, if possible, for the sake of your health and the health of our world! Put all ingredients (except crust) in a bowl, and mix well with a fork. Dump into crust and enjoy! Tastes great topped with banana “ice cream” (see recipe in Uncooking with Jameth and Kim) or any vegan “ice cream.” For a lighter pie, skip the optional almonds and/or use one of the non-nut crusts (or no crust at all).
Almond Crust
- 2 cups almonds (Preferably soaked and dehydrated first, as described in recipe above, for superior digestion and crunch.) (Ideally, use plant-source digestive enzymes with all un-soaked nuts, seeds, and grains.)
- 1/3 to 1/2 cup dates (Remove pits first!)

Mix all ingredients in a food processor. Add a little water, if necessary to mix. Form into crust in pie plate.Highly Recommended Adjunct: HealthForce’s own Digestion Enhancement Enzymes™
